Ingredients

Steak and Marinade

  • 1 lb sirloin steak (about 1-inch thick)
  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper

Base and Toppings

  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)

Tzatziki Sauce

  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp fresh lemon juice
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • Salt & pepper to taste

Lemon-Oregano Vinaigrette

  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp honey (omit for Whole30)
  • 1 garlic clove (minced)
  • ½ tsp dried oregano
  • Salt & pepper to taste

Instructions

  1. Marinate Steak: In a bowl, combine 3 tablespoons olive oil, minced garlic, 1 tablespoon lemon juice, dried oregano, dried thyme, salt, and black pepper to create the marinade. Coat the sirloin steak thoroughly with this mixture. Cover and refrigerate for at least 30 minutes and up to 4 hours to allow flavors to penetrate the meat.
  2. Make Tzatziki: In a separate bowl, mix together Greek yogurt, grated and squeezed cucumber, 1 tablespoon lemon juice, minced garlic, chopped fresh dill, and salt and pepper to taste. Stir well and chill in the refrigerator to meld the flavors while preparing the rest of the meal.
  3. Make Dressing: Whisk together olive oil, lemon juice, honey, minced garlic, dried oregano, salt, and pepper in a small bowl until well combined to create a bright and tangy vinaigrette.
  4. Cook Steak: Heat a skillet over medium-high heat. Remove the steak from the marinade and sear for 4 to 5 minutes per side or until desired doneness is reached. Let the steak rest for several minutes to retain juices, then slice it thinly against the grain.
  5. Assemble Bowl: In serving bowls, layer the cooked grains as the base. Top with sliced steak, cherry tomatoes, diced cucumber, sliced red onion, kalamata olives, roasted chickpeas if using, crumbled feta, and fresh herbs. Drizzle with the prepared vinaigrette and dollop with chilled tzatziki sauce before serving.
