  • 4 cod fillets (½ lb / 220 g each) – cod, halibut, or hake

    • 2 cloves garlic
    • 2 tablespoons fresh lemon juice
    • 1 teaspoon lemon zest (optional)

    • ¼ teaspoon chili flakes
    • 3 tablespoons chopped fresh parsley

Instructions

  1. Prepare the Vegetables: Begin by preheating your oven to 400°F (200°C). In a large mixing bowl, combine the cherry tomatoes, quartered artichoke hearts, sliced bell pepper, shallot quarters, chopped garlic, black olives, and capers.
  2. Season the Mixture: Drizzle the vegetables with three tablespoons of olive oil. Sprinkle with kosher salt, black pepper, oregano or Italian seasoning, and chili flakes. Toss everything thoroughly to ensure the vegetables are well coated with the oil and spices.
  3. Arrange the Cod: Place the cod fillets in a baking dish large enough to fit them in a single layer. Pour the seasoned vegetable mixture evenly over and around the cod fillets.
  4. Bake the Cod: Place the baking dish in the preheated oven and bake for about 20-25 minutes until the cod is opaque and flakes easily with a fork, and the vegetables are tender and roasted.
  5. Prepare the Gremolata Sauce: While the cod bakes, finely mince the garlic cloves and chop the fresh parsley. In a small bowl, whisk together the garlic, lemon juice, lemon zest (if using), olive oil, chili flakes, salt, and pepper. Stir in the chopped parsley to complete the gremolata.
