Mexican-style cucumbers are a fresh, tangy, and flavorful dish made with cucumbers marinated in vinegar, garlic, and herbs, with a hint of spice and sweetness. Perfect as a snack or side dish.

Ingredients

500 g cucumbers, sliced into thin rounds

250 ml vinegar

250 ml water

1 tablespoon salt

2 tablespoons sugar

2 cloves garlic, crushed

1 dried chili (optional, for heat)

5 black peppercorns

1 bay leaf

Fresh herbs (such as dill or cilantro), a small handful, roughly chopped

2 tablespoons olive oil

1 tablespoon maple syrup

2 tablespoons lime juice (freshly squeezed)

1 small red onion, finely chopped

Instructions

  1. In a large mixing bowl, combine the vinegar, water, salt, and sugar. Stir until the sugar and salt are dissolved.
  2. Add the crushed garlic, dried chili (if using), black peppercorns, and bay leaf to the mixture. Stir again to combine.
  3. Add the sliced cucumbers to the bowl, making sure they are fully submerged in the liquid. If necessary, add more water or vinegar to cover the cucumbers.
  4. Cover the bowl and refrigerate for at least 2 hours to allow the cucumbers to marinate and absorb the flavors.
  5. After marinating, add the chopped fresh herbs, olive oil, maple syrup, lime juice, and chopped red onion. Stir gently to combine.
  6. Taste and adjust the seasoning, adding more salt, sugar, or lime juice if needed.
  7. Serve chilled and enjoy!

Notes

For extra heat, increase the number of dried chilies or add fresh sliced jalapeƱos.

For a sweeter version, add more maple syrup or honey.

To make it a salad, mix in some diced tomatoes or avocado.

Omit the olive oil or replace it with a plant-based oil for a vegan version.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
