Mexican White Trash Casserole is a hearty, flavorful dish layering crunchy Doritos, savory shredded chicken or ground beef, creamy soup, and melted cheese. This easy casserole is perfect for weeknight dinners or casual gatherings, delivering bold Mexican-inspired flavors and a satisfying texture contrast.
1 bag Nacho Doritos, crushed
2 cups shredded chicken or ground beef
2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
1 can (10.75 oz) cream of chicken soup
1 can Rotel tomatoes, undrained
½ cup sour cream
½ cup milk
½ package taco seasoning (or more, to taste)
Preheat oven to 350°F (175°C).
In a large bowl, mix shredded chicken or ground beef with taco seasoning.
In another bowl, whisk together cream of chicken soup, sour cream, milk, and undrained Rotel tomatoes.
Combine the soup mixture with the seasoned meat; stir well.
Grease a 9×13-inch baking dish. Layer half the crushed Doritos evenly on the bottom.
Spread the meat and soup mixture over the Doritos.
Sprinkle half the shredded cheese over the meat layer.
Add remaining crushed Doritos on top, then finish with remaining cheese.
Cover with foil and bake 25 minutes. Remove foil and bake 10 more minutes until cheese is melted and bubbly.
Let cool slightly before serving.

Use cream of mushroom or celery soup as alternatives.
Add jalapeños or hot sauce for spicier flavor.
Top with sliced olives or diced avocado before serving.
