Ingredients

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

2 tsp ground cinnamon

1/2 tsp salt

1/2 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1/2 cup vegetable oil (or canola oil)

1 1/2 cups apples, peeled, cored, and chopped or grated

1/2 cup milk (or plant-based alternative)

1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate large bowl, whisk together granulated sugar, brown sugar, eggs, oil, milk, and vanilla until smooth.
  4. Gently stir the dry ingredients into the wet mixture until just combined—avoid overmixing.
  5. Fold in the chopped or grated apples until evenly distributed.
  6. Pour the batter into the prepared loaf pan, smoothing the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
