Rich, fudgy, and naturally sweetened no-bake brownie bites made with nuts, dates, and cocoa — a wholesome, chocolatey snack ready in minutes with no oven required.

Ingredients

1 ½ cups (180g) raw walnuts or pecans

1 cup (175g, about 1012 large) pitted Medjool dates

6 tablespoons (30g) unsweetened cocoa powder (preferably Dutch-processed)

2 tablespoons pure maple syrup (or raw honey if not vegan)

1 teaspoon pure vanilla extract

¼ teaspoon fine sea salt

Optional: 1–2 tablespoons water (if mixture is too dry)

Optional add-in: ¼ cup mini chocolate chips (dairy-free if needed)

Instructions

  1. Add walnuts or pecans to a food processor and pulse until finely ground but not nut butter.
  2. Add pitted Medjool dates and process until mixture starts to clump.
  3. Add cocoa powder, maple syrup, vanilla extract, and sea salt. Process until a thick, sticky dough forms.
  4. If mixture is too dry, add 1–2 tablespoons of water, pulsing until fudgy and cohesive.
  5. Pulse in mini chocolate chips, if using.
  6. Scoop tablespoon-sized portions and roll into balls between your palms.
  7. Place on a parchment-lined tray and refrigerate 20–30 minutes to firm up.
  8. Store in an airtight container in the refrigerator or freezer.

Notes

If dates are dry, soak them in warm water for 10 minutes and drain before using.

Add a dash of espresso powder to deepen chocolate flavor.

Roll bites in cocoa, coconut, or crushed nuts for a coated finish.

These bites are vegan and gluten-free as written (if using maple syrup).

Keep chilled for a firmer texture or at room temperature for a softer bite.
