One Pan Balsamic Chicken is a deliciously simple yet elegant meal featuring tender chicken breasts glazed with a sweet and tangy balsamic sauce, topped with fresh mozzarella and grape tomatoes. This easy, one-pan recipe is perfect for a weeknight dinner or special occasion.

Ingredients

For the Balsamic Glaze:

1/3 cup balsamic vinegar

2 tbsp honey

2 tbsp olive oil

4 garlic cloves, minced

1 tsp Italian seasoning

1 tsp onion powder

1 tsp garlic powder

1 tbsp Dijon mustard

For the Chicken:

2 tbsp vegetable oil

2 lb chicken breasts, boneless and skinless, pounded to even thickness

Sea salt to taste

Black pepper to taste

For Topping:

8 oz fresh mozzarella

2 cups grape tomatoes, halved

2 tbsp fresh basil, chopped

Instructions

  • Prepare the balsamic glaze: In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, Italian seasoning, onion powder, garlic powder, and Dijon mustard. Set aside.

  • Sear the chicken: Heat vegetable oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with sea salt and black pepper. Sear for 4-5 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.

  • Prepare the glaze and tomatoes: In the same skillet, reduce heat to medium. Add the balsamic glaze, scraping up any browned bits. Bring to a simmer and add halved grape tomatoes. Stir to coat with glaze.

  • Finish cooking: Return the chicken to the skillet, spooning the glaze over the top. Place fresh mozzarella on each chicken breast. Transfer the skillet to the oven and broil for 2-3 minutes until the cheese is melted and bubbly.

  • Serve: Remove from oven, garnish with fresh basil, and serve immediately.

Notes

Add vegetables like zucchini or bell peppers with the tomatoes for added flavor and nutrition.

Use chicken thighs for a juicier, richer flavor instead of breasts.

For a spicy kick, add red pepper flakes to the balsamic glaze.

If you don’t have mozzarella, try provolone, gouda, or cheddar.
