This Panini Sandwich offers a wholesome, vegan-friendly option with creamy avocado, melted vegan mozzarella, and fresh basil, all served on crispy, toasted bread. Topped with a sweet and tangy balsamic glaze, it’s the perfect healthy twist on a classic sandwich.

Ingredients

4 slices bread

4 slices vegan mozzarella

2 avocados, sliced

1 tomato, sliced

¼ cup fresh basil

2 tablespoons vegan butter

2 tablespoons balsamic glaze

1 teaspoon nutritional yeast

¼ teaspoon garlic powder (optional)

Instructions

  1. Prepare the Ingredients: Slice the avocados and tomato. If using, have garlic powder ready.
  2. Assemble the Sandwiches: On two slices of bread, layer one slice of vegan mozzarella, avocado slices, tomato slices, and fresh basil. Sprinkle with nutritional yeast and garlic powder (if using). Top with the remaining slice of bread.
  3. Butter the Bread: Spread vegan butter on the outside of each slice of bread, making sure it’s evenly coated.
  4. Grill the Panini: Heat a panini press or skillet over medium heat. Grill the sandwich until the bread is golden and crispy and the cheese is melted (about 3-4 minutes per side, or as per panini press instructions).
  5. Finish the Sandwich: Drizzle balsamic glaze over the sandwich once cooked.
  6. Serve: Cut the panini in half and serve immediately for a delicious, crispy sandwich.

Notes

For a spicier version, add jalapeños or a drizzle of hot sauce inside the sandwich.
