These Parmesan Roasted Potatoes are a crispy, flavorful side dish perfect for any meal. Baby potatoes are tossed with olive oil, butter, fresh thyme, and Parmesan cheese, then oven-roasted to golden perfection and finished with a drizzle of balsamic glaze for a tangy-sweet contrast.

Ingredients

Potatoes

  • 1.5 lbs baby potatoes (Yukon Gold or red), washed and dried

Seasoning & Toppings

  • 6 oz grated Parmesan cheese (about 3/4 cup)
  • 1 tablespoon fresh thyme leaves, all stems removed
  • 3 tablespoons butter
  • 1/2 teaspoon freshly cracked black pepper
  • 3 tablespoons olive oil
  • 1 teaspoon flaky sea salt (such as Maldon)
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat the oven. Set your oven to 400°F (200°C) to ensure it’s hot enough to roast the potatoes to a crispy finish.
  2. Prepare the potatoes. Place the washed and dried baby potatoes in a large mixing bowl. This ensures even seasoning and coating of flavors.
  3. Season and coat. Add the olive oil, melted butter, fresh thyme leaves, cracked black pepper, and flaky sea salt to the potatoes. Toss thoroughly so every potato is evenly coated with the mixture.
  4. Add Parmesan cheese. Sprinkle the grated Parmesan over the coated potatoes and toss gently to combine. The cheese will add a rich, savory crust during roasting.
  5. Roast the potatoes. Spread the potatoes in a single layer on a baking sheet lined with parchment paper or a lightly greased pan. Roast in the preheated oven for 30-35 minutes, turning halfway through, until they are golden brown and crispy on the outside and tender inside.
  6. Finish with balsamic glaze. Remove the potatoes from the oven and transfer them to a serving dish. Drizzle the balsamic glaze evenly over the hot roasted potatoes to add a burst of tangy sweetness.
  7. Serve. Serve immediately as a delicious side dish alongside your favorite main course.

Notes

  • Use baby potatoes like Yukon Gold or red potatoes for the best texture and flavor.
  • Ensure potatoes are thoroughly dried before seasoning to achieve crispiness.
  • To melt the butter easily, warm it gently in the microwave or a small pan before mixing with the potatoes.
  • You can substitute balsamic glaze with a reduction of balsamic vinegar if preferred.
  • For a vegetarian option, this recipe is suitable as is, given Parmesan is acceptable; otherwise, use a vegetarian Parmesan alternative.
  • Use freshly cracked pepper and flaky sea salt for the best seasoning impact.
