Pear & Whipped Goat Cheese Sweet Potato Rounds are an elegant appetizer featuring roasted sweet potato slices topped with creamy whipped goat cheese, fresh pear, crunchy walnuts, dried cranberries, and a drizzle of honey.

Ingredients

2 sweet potatoes, peeled & sliced 1/2 inch thick

3 tbsp extra virgin olive oil

1/2 tsp salt

1/2 tsp dried thyme

8 oz goat cheese, room temperature

1/2 cup heavy cream

1 pear, thinly sliced

1/2 cup walnuts, chopped

1/2 cup dried cranberries

Fresh thyme, optional

Honey, optional

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and dried thyme. Spread in a single layer on the baking sheet.
  3. Roast for 20–25 minutes, flipping halfway through, until tender and golden.
  4. Whip goat cheese and heavy cream with a hand mixer until smooth and fluffy.
  5. Let sweet potatoes cool slightly, then top each with whipped goat cheese.
  6. Add a pear slice to each round, then sprinkle with walnuts and dried cranberries.
  7. Garnish with fresh thyme and drizzle lightly with honey if desired.

Notes

Swap goat cheese for ricotta, cream cheese, or brie for a different flavor.

Use pomegranate seeds instead of cranberries for a festive twist.
