Ingredients

Nuts and Seeds

  • 2 cups roughly chopped pecan halves (raw, unsalted)
  • 1 cup pepitas (raw, unsalted)

Syrup Mixture

  • 1/2 cup pure maple syrup
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 275˚F and line a sheet pan with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Mix Nuts and Syrup: In a medium bowl, combine the pecans and pepitas. In a separate small bowl, whisk together the maple syrup, olive oil, kosher salt, and black pepper until smooth and well blended.
  3. Coat Nuts: Pour the maple syrup mixture over the nut and seed mixture and stir well until all pieces are evenly coated with the syrup mixture.
  4. Spread on Sheet Pan: Transfer the coated nuts and seeds to the prepared sheet pan and spread them out into an even, thin layer for uniform baking.
  5. Bake: Place the sheet pan on the lowest rack of the oven and bake for about 33-35 minutes. Rotate the pan halfway through baking to ensure even browning. The brittle is done when it is browned around the edges.
  6. Cool and Break: Remove the brittle from the oven and allow it to cool completely on the sheet pan. Once cooled, break the brittle into bite-sized pieces.
  7. Store: Store the brittle in an airtight container at room temperature for up to a week or freeze for up to 3 months to maintain freshness.
