Pepper Ribs are tender baby back ribs slow-cooked with Pepper soda, smoky spices, brown sugar, and Worcestershire sauce, then coated in rich BBQ sauce. This recipe delivers a perfect balance of sweet, smoky, and peppery flavors that make for an irresistible barbecue classic.

Ingredients

2 racks baby back ribs

1 can (12 oz) Dr Pepper soda

1 cup BBQ sauce (your favorite)

¼ cup brown sugar

1 tbsp Worcestershire sauce

2 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp black pepper

Salt, to taste

Instructions

  1. Preheat oven to 300°F (150°C).

  2. Remove silver skin from back of ribs.

  3. Mix smoked paprika, garlic powder, onion powder, black pepper, salt, and brown sugar to make spice rub.

  4. Rub spice mixture evenly over ribs.

  5. Place ribs in roasting pan; pour Dr Pepper and Worcestershire sauce around ribs (not on rub).

  6. Cover tightly with foil and bake 2.5 to 3 hours until tender.

  7. Brush ribs generously with BBQ sauce.

  8. Increase oven to 400°F (200°C), bake ribs uncovered 10-15 minutes to caramelize sauce.

  9. Let rest before slicing and serving.

Notes

Add chili powder or cayenne to rub for heat.

Finish on grill for smoky char.

Use homemade or favorite BBQ sauce variations.

Add apple cider vinegar to baking liquid for tang.

Store leftovers refrigerated up to 3 days; reheat gently covered.
