Pepperoni Caprese Bites with Basil Vinaigrette

A fun twist on caprese salad, these bite-sized skewers feature mozzarella, pepperoni, basil, and cherry tomatoes, served with a zesty basil vinaigrette for a fresh and flavorful appetizer.

Ingredients

24 mini mozzarella balls

24 basil leaves

24 slices pepperoni

24 small cherry tomatoes

24 toothpicks

⅓ cup olive oil

1 tbsp white balsamic vinegar

¼ tsp garlic powder

1 scallion, finely minced

6 basil leaves, finely chopped

Pinch of salt

6 grinds black pepper

Instructions

  1. Thread one mozzarella ball onto each toothpick.
  2. Fold a slice of pepperoni in half twice and add to the toothpick after the cheese.
  3. Add a basil leaf and then a cherry tomato to complete each bite.
  4. Whisk together olive oil, white balsamic vinegar, garlic powder, scallion, basil, salt, and pepper to make the vinaigrette.
  5. Arrange bites on a platter and drizzle with vinaigrette or serve with the vinaigrette on the side for dipping.

Notes

Swap pepperoni with salami, or hot soppressata for variation.

Use grape tomatoes instead of cherry tomatoes if preferred.

Try balsamic glaze in place of vinaigrette for a sweeter option.

Assemble close to serving time to keep basil fresh.

Recipe can be easily doubled for larger gatherings.
