Ingredients

2 pounds Tomahawk steak

1 teaspoon sea salt

¼ teaspoon black pepper

1 tablespoon olive oil

Herb butter (recipe below)

Herb Butter:

4 tablespoons unsalted butter, softened

1 tablespoon fresh parsley, finely chopped

1 teaspoon garlic, minced

1 teaspoon lemon zest

½ teaspoon fresh thyme (optional)

Instructions

  1. Prepare the Steak: Remove the Tomahawk steak from the refrigerator 30-60 minutes before cooking to bring it to room temperature.

  2. Season the Steak: Pat the steak dry and rub with olive oil. Season both sides generously with sea salt and black pepper.

  3. Preheat Grill/Pan: Preheat a grill or heavy skillet over medium-high heat. For a grill, create two heat zones (high and medium).

  4. Sear the Steak: Sear the steak for 3-4 minutes on each side until a golden crust forms. If using a grill, move to a cooler part for further cooking.

  5. Finish Cooking: Reduce heat to medium and cook the steak for an additional 10-15 minutes, checking the internal temperature (120-125°F for rare, 130-135°F for medium-rare, etc.).

  6. Rest the Steak: Let the steak rest for 10 minutes after removing from heat to redistribute the juices.

  7. Top with Herb Butter: Place a dollop of herb butter on the warm steak and allow it to melt.

  8. Serve: Slice against the grain and serve immediately with your favorite sides.

Herb Butter Directions:

  1. Combine softened butter, parsley, garlic, lemon zest, and thyme in a small bowl.

  2. Mix well and roll into a log using plastic wrap. Refrigerate until ready to serve.

Notes

Variations: Add crushed red pepper flakes for a spicy herb butter, or mix in blue cheese for a tangy twist.

Storage: Leftover steak can be stored in an airtight container in the fridge for up to 3 days.
