This Pickle Pico de Gallo Pasta Salad adds a tangy twist to the classic pasta salad with its zesty pickle pico de gallo, creamy mayo-sour cream dressing, and optional grilled chicken. A fun and flavorful dish perfect for BBQs, picnics, and family gatherings.
For the Pasta Salad:
2 cups macaroni (large elbows)
1 cup Pickle Pico de Gallo
¼ cup chopped parsley
1 cup mayo
¼ cup sour cream
½ cup grilled chicken, chopped (optional)
⅓ cup cornichons, chopped (optional)
For the Croutons:
2 tbsp melted butter
1 clove garlic, minced
Cook the macaroni: Boil the macaroni in salted water according to package instructions. Drain and rinse under cold water to cool.
Prepare the croutons: Melt butter in a pan, sauté minced garlic for 30 seconds, and toss croutons in the butter-garlic mixture. Toast for 2-3 minutes until golden and crispy.
Combine the ingredients: In a large bowl, mix the cooled macaroni, pickle pico de gallo, chopped parsley, grilled chicken (if using), and cornichons (if using). Stir in the mayo and sour cream dressing and toss gently.
Chill: Refrigerate the salad for 30 minutes to let the flavors meld.
Serve: Stir before serving and enjoy!
For a vegan option, substitute mayo and sour cream with plant-based alternatives and omit the grilled chicken.
You can swap macaroni for another short pasta shape like rotini or farfalle.
