Poffertjes are traditional Dutch mini pancakes that are fluffy, sweet, and perfect for breakfast or dessert. Made with yeast and a light batter, they are cooked in a special poffertjes pan to give them their characteristic puffed and golden appearance. Served warm with butter and powdered sugar, they offer a delightful treat that is easy to make at home.

Ingredients

Wet Ingredients

  • 1 1/2 cup warm milk (90 to 100 degrees F)
  • 1 egg

Dry Ingredients

  • 1 tbsp SAF Instant Yeast
  • 1 3/4 cup all-purpose flour (white flour)
  • 1 tbsp sugar
  • 1/2 tsp salt

For Cooking

  • Butter, for generously greasing the pan

Instructions

  1. Activate Yeast: Combine the SAF Instant Yeast with the warm milk (between 90 to 100 degrees F) and let sit for about 5-10 minutes until it becomes frothy, indicating the yeast is active.
  2. Prepare Batter: In a mixing bowl, whisk together the all-purpose flour, sugar, and salt. Make a well in the center and add the activated yeast mixture along with the egg. Mix until you get a smooth, slightly runny batter. Let it rest for about 30 minutes to allow the yeast to ferment and the batter to rise.
  3. Heat the Poffertjes Pan: Place a poffertjes pan on medium heat and generously grease each indentation with butter to prevent sticking and add flavor.
  4. Cook Poffertjes: Once the pan is hot, pour the batter into each indentation, filling about 3/4 full. Cook until the tops begin to set and bubbles form, then use a skewer or fork to flip each poffertje so the other side can cook and turn golden brown, about 1-2 minutes per side.
  5. Serve Warm: Remove the poffertjes from the pan and serve immediately with additional butter and powdered sugar if desired for a classic finish.

Notes

  • Using a poffertjes pan is key to achieving the traditional puffed shape, but if unavailable, small thick pancakes cooked in a regular skillet are a good alternative.
  • Allowing the batter to rest helps develop flavor and results in lighter, fluffier poffertjes.
  • Serve immediately for the best texture as poffertjes tend to lose their softness once cooled.
  • You can customize toppings with fresh fruit, syrup, or whipped cream for added indulgence.
