This Pumpkin Juice is a cozy fall drink made with apple cider, apricot juice, pumpkin puree, warm spices, and vanilla. It can be served warm with cinnamon sticks or chilled over ice, making it a festive and versatile seasonal beverage.

Ingredients

1 gallon (3.78 L) apple cider

3 cups (710 ml) apricot juice

15 oz (425 g) pumpkin puree

1/3 cup (73 g) brown sugar

4 tsp pumpkin pie spice

1 tbsp (15 ml) vanilla

Cinnamon sticks for garnish

Instructions

  1. In a large pot, whisk together apple cider, apricot juice, pumpkin puree, brown sugar, pumpkin pie spice, and vanilla.
  2. Bring to a gentle simmer over medium heat, stirring occasionally until sugar dissolves and pumpkin blends smoothly.
  3. Once heated through, remove from stove. Strain through a fine mesh sieve if a smoother texture is desired.
  4. Serve warm in mugs with cinnamon sticks, or chill in the refrigerator and serve over ice.

Notes

Pear juice can be substituted for apricot juice for a milder flavor.

Add spiced rum or bourbon for a spiked version.

Blend in coconut milk for extra creaminess.

Sprinkle ground cinnamon or nutmeg on top before serving for added aroma.
