Ingredients

Cream Layer:

2 cups heavy cream

1 cup powdered sugar

3/4 cup marshmallow cream

Pumpkin Layer:

2 cups pumpkin puree

6 ounces reduced-fat cream cheese

1/2 teaspoon pumpkin pie spice

1 cup powdered sugar

Crumble Layer and Topping:

20 gingersnap cookies

3 tablespoons pecans, chopped

Instructions

  1. Prepare the cream layer: In a large mixing bowl, whip heavy cream with powdered sugar until soft peaks form. Fold in marshmallow cream until smooth. Set aside.
  2. Prepare the pumpkin layer: In another bowl, beat cream cheese until smooth. Add pumpkin puree, pumpkin pie spice, and powdered sugar, mixing until fully combined.
  3. Make the crumble: Crush gingersnap cookies and mix with chopped pecans. Set aside.
  4. Assemble the parfaits: In individual serving glasses or jars, layer cream, pumpkin mixture, and crumble. Repeat layers as desired, ending with a crumble topping.
  5. Chill and serve: Refrigerate for at least 1–2 hours before serving to allow layers to set. Garnish with extra pecans or a drizzle of caramel if desired.

Notes

Add a layer of chocolate ganache or low-carb chocolate chips for a richer dessert.

Use whipped coconut cream for a dairy-free option.

Swap gingersnaps for graham crackers or spiced cookies to change the flavor profile.

Sprinkle cinnamon, nutmeg, or pumpkin pie spice on top for extra festive flair.

Store parfaits in the refrigerator for up to 2 days. Assemble just before serving if you want the crumble to stay crisp.
