Ingredients

2 slices of whole-grain bread

½ cup ricotta cheese

½ cup pumpkin puree

1 tablespoon honey

½ teaspoon pumpkin pie spice

¼ cup toasted pecans

A pinch of sea salt

Instructions

  1. Toast the whole-grain bread slices until golden brown and crisp.
  2. In a small bowl, combine the ricotta cheese, pumpkin puree, honey, and pumpkin pie spice. Stir until smooth and well combined.
  3. Spread the pumpkin-ricotta mixture generously over the toasted bread slices.

Notes

For a dairy-free version, swap the ricotta cheese with a plant-based ricotta or a nut butter like almond or cashew butter.
