Ingredients

Mashed Purple Sweet Potatoes

  • 2 pounds purple “stokes” sweet potatoes (roughly 2 large)
  • 1/2 cup milk (cow’s milk or unsweetened, unflavoured dairy-free alternative, or cream)
  • 1/4 cup butter (regular, unsalted or dairy-free alternative)
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/2 tsp garlic powder
  • 2 Tbsp chopped parsley
  • 2 Tbsp chopped green onion
  • Salt, to taste

Instructions

  1. Prep the Sweet Potatoes: Peel and wash the purple sweet potatoes thoroughly. Cut them into roughly 1-inch thick cubes to ensure even cooking.
  2. Boil the Potatoes: Place the cubed sweet potatoes in a large pot. Fill the pot with water until the potatoes are completely submerged. Cover with a lid, and bring to a boil over high heat.
  3. Simmer Until Tender: Once boiling, reduce the heat to low. Keep the pot covered and simmer the potatoes for about 15 minutes, or until a fork easily pierces through the potatoes.
  4. Drain the Potatoes: Turn off the heat and carefully drain the water from the pot using a colander.
  5. Add Flavorings: Return the drained potatoes to the pot or a mixing bowl. Add the milk, butter, cinnamon, nutmeg, garlic powder, and season generously with salt.
  6. Mash to Desired Texture: Use a potato masher to mash the sweet potatoes until smooth or your preferred texture. Adjust the creaminess by adding more milk or butter if needed. Taste and modify seasonings accordingly.
  7. Finish with Fresh Herbs: Fold in the chopped parsley and green onion for freshness and a pop of color. Serve the mashed purple sweet potatoes hot as a flavorful side dish.

Notes

  • You can substitute cow’s milk with any unsweetened, unflavored dairy-free milk like almond or oat milk for a dairy-free option.
  • If you prefer a richer taste, use cream instead of milk.
  • Adjust the seasoning and spices according to your taste preferences.
  • To save time, sweet potatoes can be steamed instead of boiled, but boiling ensures even cooking.
  • This side dish pairs well with roasted meats, grilled vegetables, or as part of a holiday meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently before serving.
