These Quick & Easy Mint Chocolate Energy Balls are a delicious, no-bake snack packed with natural sweetness from medjool dates and a refreshing hint of peppermint. Perfect for a healthy energy boost, they combine almond flour, cacao, and coconut for a nutritious treat that’s simple to prepare and great for on-the-go snacking.

Ingredients

Energy Balls

  • 1 cup medjool dates, pitted (approx 10 dates)
  • 3/4 cup almond flour
  • 1/2 cup desiccated coconut
  • 3 Tbsp raw cacao powder
  • 1 tsp peppermint extract (food grade)
  • 1/2 tsp vanilla extract
  • 2 Tbsp water
  • Pinch of sea salt

Optional Toppings

  • Mini chocolate chips
  • Extra desiccated coconut

Instructions

  1. PREP: Line a small baking sheet with parchment paper to prevent sticking and make cleanup easy.
  2. COMBINE: Add all ingredients except the optional toppings to a large food processor. Pulse until the mixture starts to stick together and forms a large, cohesive mass.
  3. ROLL: Scoop approximately one tablespoon of the mixture and roll it between your hands into a smooth ball shape.
  4. OPTIONAL TOPPINGS: If desired, place mini chocolate chips or extra coconut into small dishes. Gently roll each ball in the topping of your choice to coat them evenly.
  5. FREEZE: Arrange the formed balls on the lined baking sheet and repeat until all mixture is used. Place the tray in the freezer for about 1 hour to allow the energy balls to firm up before serving.

Notes

  • Medjool dates should be soft; if they are dry, soak in warm water for 10 minutes, then drain before using.
  • These energy balls can be stored in an airtight container in the refrigerator for up to one week or frozen for up to 3 months.
  • For a nut-free version, substitute almond flour with oat flour and ensure all other ingredients are nut-free.
