Ingredients

Potstickers and Sauces

  • 30 Frozen Potstickers (large bag)
  • 1 Packet Sweet-Hot Sauce (comes in potsticker packet)
  • 3 Tsp Hot Chili Sauce (adjust to taste)

Oils and Nuts

  • 4 Tbsp Sesame Oil (or any light oil)
  • 4 Tbsp Cashews
  • 3 Tsp Sesame Seeds

Vegetables and Aromatics

  • 2 Large Onions, thinly sliced
  • 1 Tsp Grated Ginger (powder can be used)
  • 1 Tsp Grated Garlic (powder can be used)
  • 4 Medium Red Bell Peppers, thinly sliced
  • 2 Small Green Bell Peppers, thinly sliced
  • 2 Large Carrots, thinly sliced
  • 3 Cups Sliced Cabbage
  • 2 Cups Sliced Mushrooms
  • 4 Stalks Green Onions, thinly sliced

Instructions

  1. Prepare Potstickers: Heat a large skillet or wok over medium-high heat. Add 2 tablespoons of sesame oil and cook the frozen potstickers until they are golden brown and crispy on the outside, turning occasionally to avoid burning. This usually takes about 6-8 minutes. Remove potstickers and set aside.
  2. Toast Cashews and Sesame Seeds: In the same skillet, add the cashews and sesame seeds. Toast them for about 2 minutes until fragrant, stirring frequently to prevent burning. Remove and set aside with the potstickers.
  3. Sauté Aromatics and Vegetables: Add the remaining sesame oil to the skillet. Add grated ginger and garlic; sauté for 30 seconds until aromatic. Then, add onions, red and green bell peppers, carrots, cabbage, and mushrooms. Stir-fry the vegetables for about 5-7 minutes, stirring frequently until they are tender but still crisp.
  4. Add Sauces and Combine: Pour in the sweet-hot sauce packet and hot chili sauce over the vegetables. Stir well to coat. Add the cooked potstickers, toasted cashews, and sesame seeds back into the skillet. Toss all ingredients together gently to combine and heat through for 2-3 minutes.
  5. Finish and Garnish: Remove from heat and sprinkle sliced green onions on top as garnish. Serve immediately while hot for the best flavor and texture.

Notes

  • You can substitute any preferred light oil for sesame oil if desired.
  • Adjust the quantity of hot chili sauce to control the spiciness of the dish.
  • For a vegetarian version, ensure potstickers do not contain meat or substitute with vegetable dumplings.
  • Feel free to swap or add other vegetables like snap peas or broccoli as per your preference.
  • Use freshly grated ginger and garlic for maximum flavor, but powders work fine as a quick alternative.
