Ingredients

Salad

  • 1 small radicchio head – roughly chopped, about 4 cups when prepared
  • 1 red apple – cut into thin strips
  • 1 small red onion – finely sliced
  • 1/3 cup raw almonds
  • 1/3 cup Parmesan – freshly shaved
  • Sea salt and freshly ground black pepper – to taste

Vinaigrette

  • 2 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp maple syrup
  • 1 tsp Dijon mustard

Instructions

  1. Roast the Almonds: Preheat your oven to 180°C (355°F). Spread the raw almonds in a single layer on a baking tray and roast for about 10 minutes until they become aromatic and golden brown. Stir once or twice during roasting for even cooking. Remove from oven and transfer to a plate to cool. Once cooled, chop the almonds roughly.
  2. Prepare the Salad Base: In a large bowl, combine the roughly chopped radicchio leaves, thinly sliced red apple strips, and finely sliced red onion.
  3. Make the Vinaigrette: In a small bowl or jar with a lid, mix extra virgin olive oil, apple cider vinegar, maple syrup, and Dijon mustard until well combined.
  4. Toss the Salad: Pour the vinaigrette over the salad mixture and gently toss to coat all ingredients evenly, taking care not to bruise the delicate radicchio leaves.
  5. Add Almonds and Cheese: Sprinkle the chopped roasted almonds and freshly shaved Parmesan over the salad. Toss gently again to combine. Season with sea salt and freshly ground black pepper to taste.
