Ingredients

Red Berry Chia Seed Pudding

¾ cup strawberries, fresh or frozen

¾ cup raspberries, fresh or frozen

6 tablespoons chia seeds

1 cup coconut milk (or any milk of choice)

2 tablespoons pure maple syrup (or sweetener of choice)

1 teaspoon vanilla extract

2 teaspoons lemon juice

Layer Options

Vanilla Chia Pudding (to layer)

Whipped Coconut Cream (to top)

Instructions

For the Red Berry Chia Seed Pudding:

  1. Blend strawberries, raspberries, coconut milk, maple syrup, vanilla extract, and lemon juice until smooth.

  2. Pour the mixture into a mixing bowl and stir in chia seeds.

  3. Cover the bowl and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and thicken. Stir occasionally to prevent clumping.

For Layering (Optional):

  1. Prepare vanilla chia pudding by mixing chia seeds, milk, vanilla extract, and sweetener. Let it set in the fridge for 4 hours or overnight.

  2. Layer the red berry chia pudding with vanilla chia pudding in serving glasses.

For the Whipped Coconut Cream:

  1. Scoop the solidified coconut cream from a chilled can of coconut milk.

  2. Use a hand mixer or whisk to whip it until fluffy.

  3. Top the pudding with whipped coconut cream before serving.

To Serve:

  1. Spoon the pudding into bowls or glasses. Add whipped coconut cream or layers as desired.

  2. Garnish with extra fresh berries or a drizzle of maple syrup.

Notes

Swap berries with other fruits like mango or blueberries.
