Ingredients

24 oz Whole milk ricotta cheese (or 2% ricotta)

1 tbsp Heavy cream (add more for desired consistency)

1 tbsp Lemon zest (or 2 tbsp for extra lemon flavor)

1/2 cup Besti Powdered Monk Fruit Allulose Blend (adjust to taste)

2 tsp Vanilla extract

1 cup Raspberries

1 cup Blueberries

1 cup Blackberries

Sliced almonds (optional, for topping)

Whipped cream (optional, for topping — sugar-free preferred)

Instructions

  1. In a large mixing bowl, combine ricotta cheese, heavy cream, lemon zest, monk fruit allulose blend, and vanilla extract.

  2. Use a hand mixer or whisk to beat the mixture until smooth and creamy. If the mixture is too thick, add more heavy cream.

  3. Taste and adjust the sweetness or lemon flavor, if needed, by adding more monk fruit or lemon zest.

  4. Spoon the ricotta mixture into serving dishes or small bowls.

  5. Top with fresh raspberries, blueberries, and blackberries.

  6. Optional: Add sliced almonds for crunch or a dollop of whipped cream for extra indulgence.

  7. Serve immediately or refrigerate for 15–30 minutes to chill and set.

Notes

You can swap berries with other fruits such as strawberries, peaches, or tropical fruits for variety.

If you want a more pronounced lemon flavor, use up to 2 tbsp of lemon zest.

This dessert can easily be adapted to suit a vegan diet by replacing ricotta and heavy cream with dairy-free alternatives.
