Ingredients

Roasted Tomato Mixture

  • 6-7 garlic cloves, peeled
  • 1 shallot, halved
  • 1/3 cup extra virgin olive oil, divided
  • 2 tablespoons fresh thyme leaves
  • Salt and black pepper, to taste
  • Chili flakes, to taste
  • 4 cups cherry tomatoes, divided

Salad & Serving

  • 1 cup fresh basil leaves
  • Handful of micro basil (optional)
  • 2-3 balls burrata cheese, at room temperature

Instructions

  1. Preheat Oven: Preheat your oven to 400° F (200° C) to prepare for roasting the tomatoes and aromatics.
  2. Prepare Baking Dish: In a baking dish, combine the garlic cloves, halved shallot, 3 cups of cherry tomatoes, and fresh thyme leaves. Drizzle with 1/4 cup of olive oil and season generously with salt, black pepper, and chili flakes to your preference.
  3. Roast Tomatoes: Place the baking dish in the oven and roast for about 20 minutes, or until the tomatoes have burst and released their juices, creating a fragrant and rich mixture.
  4. Prepare Burrata and Tomatoes: While the tomatoes are roasting, arrange the burrata balls in a large salad bowl and slice the remaining 1 cup of cherry tomatoes for fresh topping.
  5. Make Garlic Shallot Paste: Once roasted, squeeze the soft garlic cloves and shallots out onto a cutting board. Mash or chop them finely to create a paste. Mix this paste back into the roasted tomatoes in the baking dish, add the remaining 1/4 cup of olive oil, and adjust seasoning with additional black pepper as needed.
