Roasted Okra is a simple, flavorful side dish that brings out the natural taste of okra with a crispy texture and savory seasoning. Easy to make and perfect for any meal.

Ingredients

18 fresh okra pods, sliced 1/3 inch thick

1 tablespoon olive oil

2 teaspoons kosher salt, or to taste

2 teaspoons black pepper, or to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Wash the okra pods thoroughly, then slice them into 1/3-inch thick rounds.
  3. In a large mixing bowl, toss the sliced okra with olive oil, kosher salt, and black pepper until the okra is evenly coated.
  4. Spread the seasoned okra in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, or until the okra is crispy and golden brown on the edges. Stir halfway through the cooking time to ensure even roasting.
  6. Remove from the oven and serve immediately. You can garnish with additional salt or a squeeze of lemon if desired.
