Tender, golden roasted parsnips with caramelized edges and a naturally sweet, savory flavor—an easy and versatile side dish for any meal.

Ingredients

4 medium parsnips, peeled and cut into ½ inch cubes

1 tablespoon extra virgin olive oil

½ teaspoon kosher salt

¼ teaspoon black pepper

Optional: ¼ teaspoon garlic powder OR ¼ teaspoon nutmeg OR ¼–½ teaspoon curry powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the cubed parsnips on a parchment-lined baking sheet.
  3. Drizzle with olive oil and sprinkle with salt and pepper. Add optional seasoning if using.
  4. Toss until evenly coated.
  5. Spread parsnips into a single layer for even roasting.
  6. Roast for 25–30 minutes, flipping halfway, until golden and tender.
