Salmon and asparagus foil packets are an easy and healthy meal that delivers tender salmon and crisp asparagus with fresh dill and lemon. Perfect for a quick weeknight dinner or outdoor cookouts, this flavorful recipe requires minimal effort and cleanup, making it an ideal choice for any occasion.
1 lb asparagus (ends trimmed)
1/2 onion (thinly sliced)
4 salmon fillets
4 tablespoons olive oil
Salt and pepper to taste
1 lemon (thinly sliced & seeds removed)
4 sprigs dill
Optional: Rice to serve
Preheat the oven to 400°F (200°C) or prepare your grill for medium heat.
Cut four large pieces of aluminum foil, each large enough to hold a salmon fillet and the vegetables.
Place one salmon fillet in the center of each piece of foil.
Arrange a handful of asparagus and a few slices of onion around the salmon fillet.
Drizzle each packet with 1 tablespoon of olive oil and season with salt and pepper to taste.
Lay 2-3 slices of lemon on top of each salmon fillet and place a sprig of dill over the top.
Fold the sides of the foil up over the salmon and vegetables, sealing each packet tightly to lock in the steam.
Place the foil packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. If grilling, cook for about 10-12 minutes, flipping halfway through.
Carefully open the foil packets (watch out for steam) and serve hot. Optionally, serve over rice.
The foil packets can be prepared ahead of time and refrigerated for up to 1 day before cooking.
For extra flavor, you can add garlic, butter, or additional herbs like rosemary or thyme.
