Ingredients

For the Tomato Mix:

2 cups cherry tomatoes, diced

1 medium white onion, chopped

1/2 lime, juiced

1/2 tsp salt (divided)

For the Chicken:

2 lbs chicken breast, boneless and skinless, diced

1/2 tsp cumin

1 tsp paprika powder

1 tbsp garlic powder

1/4 tsp red chili pepper flakes

1/4 tsp black pepper

1 cup shredded mozzarella

Instructions

  • Prepare the salsa: In a bowl, combine the diced cherry tomatoes, chopped onion, chopped jalapeño, cilantro, and lime juice. Add 1/4 tsp salt and stir to combine. Set aside.

  • Season the chicken: In a separate bowl, mix cumin, paprika, garlic powder, red chili pepper flakes, black pepper, and the remaining 1/4 tsp salt. Toss the diced chicken in the spice mixture until evenly coated.

  • Assemble the bake: Preheat oven to 375°F (190°C). Spread the seasoned chicken in a baking dish. Spoon the salsa mixture over the chicken.

  • Bake: Sprinkle mozzarella cheese evenly over the top. Bake for 25-30 minutes, until the chicken is cooked through and cheese is melted and bubbly.

  • Serve: Let the bake cool slightly before serving. Garnish with extra cilantro if desired.
