Ingredients

1 lb sausage

2 cups milk

1/4 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon ground sage

1/2 teaspoon crushed red pepper flakes (optional)

1 package of puff pastry, thawed

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a large skillet, cook the sausage over medium heat until browned and crumbled. Stir occasionally to ensure even cooking. Drain excess grease if necessary.

  3. Add the flour to the cooked sausage and stir to coat. Cook for 1–2 minutes to form a roux.

  4. Gradually add the milk while stirring continuously to avoid lumps. Cook until the gravy thickens, about 5–7 minutes. Season with salt, black pepper, sage, and red pepper flakes (if using). Stir to combine.

  5. Roll out the thawed puff pastry on a lightly floured surface. Fit the pastry into a greased pie dish or baking dish, leaving any excess around the edges.

  6. Pour the sausage gravy mixture into the puff pastry crust.

  7. Fold the edges of the pastry over the filling, creating a rustic look or covering the entire pie if you prefer a more enclosed design.

  8. Place the pie in the preheated oven and bake for 20–25 minutes, or until the puff pastry is golden brown and crisp.

  9. Allow to cool slightly before serving.

Notes

For a vegetarian version, use plant-based sausage.

You can add sautéed onions, mushrooms, or bell peppers to the gravy for added flavor.

Shredded cheese like cheddar or mozzarella can be added to the gravy mixture for a cheesy twist.

If you prefer more heat, increase the amount of red pepper flakes or add hot sauce to the gravy.
