Ingredients

1 pound lean ground beef

1 medium onion, chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced

1 cup low-sodium beef broth

1 tablespoon Worcestershire sauce

1 cup sour cream (or Greek yogurt)

1 teaspoon Dijon mustard

3 cups egg noodles

3 tablespoons all-purpose flour

Salt and pepper to taste

Instructions

  • Cook the egg noodles according to package instructions, drain, and set aside.

  • In a large skillet, heat a tablespoon of oil over medium heat. Add the ground beef, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Remove the beef from the skillet and set aside.

  • In the same skillet, add the chopped onion and sliced mushrooms. Sauté until softened, about 5 minutes.

  • Add the minced garlic and cook for an additional 1 minute.

  • Sprinkle flour over the vegetables and stir. Cook for 1-2 minutes to eliminate the raw flour taste.

  • Gradually pour in the beef broth, stirring constantly to avoid lumps. Add Worcestershire sauce and bring to a simmer. Let it cook for about 5 minutes until it thickens.

  • Stir in the sour cream (or Greek yogurt) and Dijon mustard. Return the beef to the skillet, stir, and cook for 3-4 minutes until heated through and creamy.

  • Season with salt and pepper to taste.

  • Serve the beef stroganoff over the cooked egg noodles and garnish with fresh parsley, if desired.
