Savory Steak & Potato Breakfast Hash combines crispy potatoes, tender steak, and flavorful vegetables, topped with a fried egg for a satisfying and hearty breakfast. Perfect for a protein-packed start to your day.
1 1/2 pounds Yukon Gold potatoes, diced into 1/2–3/4 inch cubes
1 1/2 pounds steak (New York, rib eye, or top sirloin)
2 teaspoons salt, divided
1 1/2 teaspoons black pepper, divided
1/4 cup oil, divided
1 medium onion, cut into chunks
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
2 cloves garlic, minced
1 teaspoon paprika
1/2 teaspoon red pepper flakes
4 large eggs
Heat 2 tablespoons of oil over medium-high heat in a large skillet.
Add diced potatoes, season with 1 teaspoon salt and 1 teaspoon black pepper. Cook for 10-12 minutes, stirring occasionally, until golden brown and crispy. Set aside.
Season steak with remaining salt and black pepper. Heat another 2 tablespoons of oil in the skillet.
Cook steak for 4-6 minutes per side, depending on desired doneness. Let rest for 5 minutes before slicing into thin strips or bite-sized pieces.
Add onion, red and green bell peppers to the skillet. Cook for 3-4 minutes until softened.
Stir in garlic, paprika, and red pepper flakes, cooking for another minute.
Add the cooked potatoes and steak to the skillet. Stir together and cook for 2-3 minutes, allowing flavors to meld.
In a separate pan, heat a small amount of oil and fry eggs to your preferred style (sunny-side up, over-easy, etc.).
Divide the hash mixture onto plates and top each with a fried egg. Garnish with fresh herbs or additional pepper if desired.
For a vegetarian version, replace steak with extra vegetables like mushrooms or zucchini.
Add shredded cheese like cheddar or gouda for extra richness.
For more heat, add extra red pepper flakes or jalapeƱos.
