This Shaved Brussels Sprout Slaw is a refreshing twist on traditional coleslaw, featuring crunchy Brussels sprouts, sweet cabbage, and a tangy apple cider vinegar dressing. Topped with fresh herbs like mint and cilantro, and a handful of pistachios, this vibrant slaw is a healthy and flavorful side dish or light meal for any occasion.

Ingredients

1 pound Brussels sprouts, shredded

8 ounces cabbage, shredded (or 1 bag prepared)

¼ cup cilantro, roughly chopped

¼ cup mint, roughly chopped

½ cup pistachios, shelled

For the Dressing:

¼ cup apple cider vinegar

3 tablespoons extra virgin olive oil

1 tablespoon granulated sugar

½ teaspoon ground coriander

Juice from 1 lime

Salt and black pepper, to taste

Instructions

  • Shred the Brussels sprouts and cabbage (if not using prepared cabbage) and place them in a large mixing bowl.

  • Roughly chop the cilantro and mint, then add them to the bowl with the Brussels sprouts and cabbage.

  • Chop the pistachios and add them for added crunch.

  • In a small bowl, whisk together the apple cider vinegar, olive oil, granulated sugar, ground coriander, lime juice, salt, and black pepper until fully combined.

  • Pour the dressing over the shredded vegetables and toss everything together until evenly coated.

  • Let the slaw sit for 10-15 minutes before serving to allow the flavors to meld.

Notes

This slaw serves 4 to 6 people and is best eaten fresh for optimal crunch.

If you prefer more protein, add grilled chicken, shrimp, or chickpeas.

For extra heat, try adding finely chopped jalapeños or chili flakes.

To make this slaw vegan, use maple syrup or agave nectar in place of granulated sugar.
