Ingredients

Wet Ingredients

  • 6 ounces silken tofu
  • 1/2 cup plant-based milk of choice (unsweetened soy milk recommended)
  • 2 tablespoons maple syrup (or sugar)
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup gluten-free oat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For Cooking

  • 1-2 teaspoons coconut oil (for baking)

Instructions

  1. Blend the wet ingredients: In a blender or using an immersion blender in a deep jug, combine the silken tofu, plant-based milk, maple syrup, apple cider vinegar, and vanilla extract. Blend until the mixture is perfectly smooth and creamy.
  2. Mix the dry ingredients: In a medium mixing bowl, whisk together the gluten-free oat flour, baking soda, and salt until well combined.
  3. Combine: Pour the blended wet mixture into the bowl with dry ingredients. Gently fold with a spatula until just combined. The batter will become bubbly. Let it rest for about 10 minutes to thicken and activate the baking soda.
  4. Bake the pancakes: Heat a non-stick pan over medium-high heat and add 1-2 teaspoons of coconut oil. Once hot, reduce the heat to medium. Pour a small amount of batter into the pan without spreading it, to help achieve fluffy pancakes. Cook until bubbles appear in the center and the edges start to set, then carefully flip and cook the other side until golden brown.
  5. Serve: Remove from the pan and serve pancakes warm, drizzled with extra maple syrup or your favorite toppings.
