Skillet Bruschetta Chicken Pasta is a quick and flavorful dish that combines fresh tomatoes, basil, balsamic glaze, tender chicken, and pasta all cooked in one skillet for an easy and impressive meal.

Ingredients

1 pound bow tie pasta

6 Roma tomatoes, chopped

Large handful of fresh basil leaves, roughly torn

2 tablespoons olive oil

Salt & pepper to taste

½ tablespoon garlic, minced

2 chicken breasts, diced

½ cup tomato sauce

½ cup balsamic vinegar

2 tablespoons white sugar

¼ cup Parmesan cheese, grated

Instructions

  1. Cook the pasta: Begin by cooking the bow tie pasta according to the package instructions. Be sure to salt the water well. Once cooked, drain the pasta, reserving 1 cup of pasta water, and set aside.
  2. Prepare the bruschetta topping: While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped Roma tomatoes, fresh basil, a pinch of salt, and pepper. Stir and let the tomatoes cook for about 3-4 minutes, just until they start to soften. Remove from heat and set aside.
  3. Cook the chicken: In the same skillet, add the remaining tablespoon of olive oil. Add the diced chicken breasts, season with salt and pepper, and cook until the chicken is golden brown and fully cooked through, about 7-8 minutes. Remove the chicken from the skillet and set aside.
  4. Make the sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the tomato sauce, balsamic vinegar, and white sugar. Stir to combine, scraping up any browned bits from the skillet. Let the sauce simmer for about 3-5 minutes, allowing it to reduce slightly and thicken.
  5. Combine everything: Return the cooked chicken and pasta to the skillet. Toss everything together, ensuring the chicken and pasta are coated in the sauce. If the sauce is too thick, add some reserved pasta water, a little at a time, until you reach your desired consistency.
  6. Finish the dish: Add the bruschetta mixture (tomatoes and basil) into the skillet and gently toss to combine. Let everything heat through for another 2-3 minutes.
  7. Serve and garnish: Serve the pasta on plates, topped with grated Parmesan cheese. Enjoy immediately!

Notes

For added flavor, you can grill the chicken before adding it to the skillet for a smoky taste.

If you prefer a creamier sauce, add a splash of heavy cream or a dollop of cream cheese to the sauce.
