Ingredients

Chili Base

  • 2 tablespoons olive oil
  • 1 large onion, chopped small
  • 3 cloves garlic, minced
  • 2 teaspoons kosher salt
  • 1 to 3 teaspoons ground chile powder (to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 pound ground turkey
  • 1 15-ounce can black or small red beans, drained and rinsed

Instructions

  1. Heat the oil: In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Sauté onions and garlic: Add the chopped onion and minced garlic to the skillet. Cook, stirring frequently, until the onion is translucent and softened, about 5 minutes.
  3. Add spices: Stir in 2 teaspoons kosher salt, 1 to 3 teaspoons ground chile powder (adjust to your heat preference), 1 teaspoon dried oregano, and 1 teaspoon ground cumin. Cook for 1 to 2 minutes to let the spices bloom and become fragrant.
  4. Cook the turkey: Add the ground turkey to the skillet. Break it up with a spatula and cook until browned all over and no longer pink, about 7 to 10 minutes.
  5. Add beans and tomatoes: Stir in the drained and rinsed beans and the canned diced tomatoes with their juice. Mix well to combine all ingredients.
  6. Simmer: Reduce the heat to low and let the chili simmer gently for 15 to 20 minutes to allow flavors to meld, stirring occasionally.
  7. Add lime juice: Squeeze the juice of one lime into the chili and stir to brighten the flavors.
