This Sloppy Joe Casserole takes the classic flavors of a Sloppy Joe sandwich and turns them into a hearty, cheesy baked pasta dish that’s perfect for family dinners and easy weeknight meals.

Ingredients

1 tablespoon olive oil

1 pound ground beef

1 onion, chopped

1 bell pepper, chopped

2 cloves garlic, minced

1 cup tomato sauce

1/4 cup ketchup

1 tablespoon Worcestershire sauce

1 tablespoon brown sugar

1 teaspoon mustard

Salt and pepper, to taste

8 ounces pasta (elbow macaroni or similar), cooked and drained

1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Add chopped onion and bell pepper; cook for about 5 minutes until softened.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Add tomato sauce, ketchup, Worcestershire sauce, brown sugar, mustard, salt, and pepper. Stir and simmer for 5 minutes.
  6. Combine the cooked pasta with the Sloppy Joe mixture in a large bowl and stir until evenly coated.
  7. Transfer the mixture to the prepared baking dish and sprinkle cheddar cheese evenly over the top.
  8. Bake uncovered for 15–20 minutes, until the cheese is melted and bubbly.
  9. Cool for a few minutes before serving.

Notes

Use ground turkey or chicken for a lighter version.

Add diced jalapeños, corn, or mushrooms for extra flavor and texture.

Top with crispy fried onions or breadcrumbs before baking for a crunchy finish.

To make ahead, assemble the casserole and refrigerate up to 24 hours before baking.

Freeze leftovers for up to 2 months; reheat covered at 350°F (175°C) until warmed through.
