Ingredients

Potatoes

  • 4 medium white potatoes

Instructions

  1. Boil potatoes: Place the potatoes in a pot and fill it with enough water to cover the potatoes by an inch. Salt the water with about a tablespoon of kosher salt. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 22 to 25 minutes.
  2. Drain and cool: Drain the potatoes using a colander and let them cool until they are comfortable to handle, about 10 minutes.
  3. Season and flavor: Preheat your oven to 450°F (230°C). Transfer the cooled potatoes to a mixing bowl, add the olive oil and everything bagel seasoning, and stir well to coat the potatoes evenly.
  4. Smash the potatoes: Arrange the potatoes on a small baking sheet. Using the bottom of a wide-bottomed glass, gently smash each potato to about ¾-inch thickness. Bake in the oven until the tops turn lightly golden and crispy, about 25 minutes.
  5. Assemble the bagel potatoes: Allow the smashed potatoes to cool slightly. Spread cream cheese generously on top of each piece, then layer with smoked salmon, slices of red onion, a few capers, shaved or sliced Persian cucumbers, and garnish with fresh dill sprigs before serving.
