Ingredients

5 pounds russet or Yukon Gold potatoes

2 tablespoons salt

Cold water

1 cup salted butter

2 cups heavy cream

1 cup shredded Gouda

½ cup sour cream

Instructions

  1. Prepare the Potatoes: Peel and cut the potatoes into uniform chunks.

  2. Boil the Potatoes: Place the potatoes in a large pot with cold water and 2 tablespoons of salt. Bring to a boil, then simmer for 15-20 minutes until fork-tender.

  3. Smoke the Potatoes (Optional): Wrap the boiled potatoes in foil and smoke them at 225°F for 30-40 minutes for added smokiness.

  4. Mash the Potatoes: Drain the potatoes and mash them with a potato masher or hand mixer for a smoother texture.
