Ingredients

Salmon Topping

  • 6-8 oz. smoked salmon
  • 2 Tbsp. capers
  • 1-2 sliced green onions
  • 1/2 cup fresh arugula
  • Cucumber slices – enough for each baguette slice
  • Optional: Parsley as a garnish and another squeeze of lemon

Cream Cheese Spread

  • 1 8 oz package of cream cheese, softened
  • 1/4 cup fresh dill, chopped well
  • 1 Tbsp fresh squeezed lemon juice
  • 1 clove fresh grated garlic
  • 1 tsp. salt
  • 1/2 tsp. fresh cracked pepper

Crostini

  • 1 thin baguette, sliced
  • 2 Tbsp. olive oil

Instructions

  1. Prepare the Cream Cheese Spread: In a mixing bowl, combine the softened cream cheese, chopped fresh dill, fresh squeezed lemon juice, grated garlic, salt, and freshly cracked pepper. Mix thoroughly until all ingredients are well incorporated and the mixture is smooth and creamy.
  2. Slice and Toast the Baguette: Cut the thin baguette into thin slices, approximately 1/4 inch thick. Brush both sides lightly with olive oil. Place slices on a baking sheet and toast them in a preheated oven at 375°F (190°C) for about 8-10 minutes, flipping once halfway through, until the crostini are golden and crispy.
  3. Assemble the Crostini: Spread a generous amount of the prepared cream cheese mixture on each toasted baguette slice. Layer each with a slice of smoked salmon, then add a few capers and sliced green onions on top.
  4. Add Fresh Toppings: Garnish each crostini with fresh arugula leaves and a thin cucumber slice. Optionally, sprinkle with chopped parsley and add an extra squeeze of lemon for brightness.
  5. Serve: Arrange the finished crostini on a serving platter and serve immediately for best texture and flavor. They make a perfect appetizer for gatherings or a sophisticated snack.

Notes

  • Use day-old baguette for better toasting results and crunchier crostini.
  • Cold cream cheese is harder to blend; be sure it is softened for easy mixing.
  • If you prefer a milder garlic flavor, reduce the amount or use garlic powder.
  • Substitute fresh dill with dried if unavailable, but reduce quantity to 1 tablespoon.
  • For a dairy-free version, try a vegan cream cheese alternative.
  • Capers can be rinsed if you prefer less saltiness.
