Rich, creamy, and full of nutty pistachio flavor, these smooth pistachio balls are a luxurious no-bake treat with a melt-in-your-mouth texture—perfect for gifting or pairing with coffee or tea.

Ingredients

397 g sweetened condensed milk

20 g unsalted butter

¼ tsp salt

100 g cream of pistachio (pistachio paste)

100 g finely diced pistachios

Instructions

  1. In a non-stick saucepan, combine sweetened condensed milk, butter, and salt. Cook over low heat, stirring constantly, until butter melts and mixture thickens slightly (about 4–5 minutes).
  2. Add the cream of pistachio and cook for another 3–5 minutes, stirring, until mixture thickens further and starts to pull away from the sides of the pan.
  3. Remove from heat and allow to cool until warm but comfortable to handle.
  4. Fold in the finely diced pistachios until evenly mixed.
  5. With lightly greased hands, roll small portions into smooth bite-sized balls.
  6. Place on parchment paper and let set at room temperature for 30–45 minutes or refrigerate to speed up setting.
  7. Once firm, transfer to an airtight container for storage.

Notes

Use unsalted or lightly salted pistachios for balanced flavor.

To make dairy-free, use coconut condensed milk and plant-based butter.

Roll in chopped pistachios, coconut, or cocoa powder for a coated variation.

Store refrigerated up to 7 days or freeze up to 1 month.

Let sit at room temperature before serving for a softer texture.
