Snickers Stuffed Dates are a decadent and healthy twist on a classic candy bar. These dates are stuffed with creamy peanut butter, crunchy peanuts, and a rich layer of dark chocolate, offering a perfect balance of sweet and salty flavors.

Ingredients

12 Medjool dates, pitted

3 tablespoons peanut butter

3 tablespoons chopped peanuts (plus more for topping if desired)

11.5 ounces extra dark chocolate chips

2 teaspoons coconut oil

Flaky salt for topping

Instructions

  1. Start by pitting the Medjool dates if they aren’t already pitted.
  2. Once pitted, make a small slit down the side of each date to create a pocket.
  3. Spoon about 1/2 teaspoon of peanut butter into each date pocket.
  4. Sprinkle the chopped peanuts over the peanut butter inside each date.
  5. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
  6. Dip each stuffed date into the melted chocolate, ensuring it’s fully coated. You can use a fork to help lift it out of the chocolate.
  7. Place the chocolate-coated dates on a parchment-lined baking sheet.
  8. Once all dates are coated, sprinkle with flaky salt and extra chopped peanuts if desired.
  9. Refrigerate the dates for about 30 minutes or until the chocolate is fully set.

Notes

You can swap peanut butter with almond or cashew butter for a different flavor.

Use any chocolate of your choice, such as milk or white chocolate.

Consider adding extra ingredients like caramel or shredded coconut inside the dates for more flavor.

For a sweeter treat, drizzle honey or maple syrup before chilling.
