Soft and Fluffy Cheese Rolls

Soft, pillowy bread rolls filled with a savory tomato-pepper sauce, gooey cheddar cheese, and fresh thyme. Perfect for snacking, serving as a side dish, or enjoying as a light meal.

Ingredients

250 ml (1 cup) warm whole milk

2 tbsp butter, melted

1 tbsp honey

7 g (2 tsp) fast-acting yeast (1 sachet)

2 eggs, beaten

500550 g (about 4 cups) strong flour

1/2 tsp salt

190 g (1 1/4 cups) jar tomato and grilled pepper sauce

300 g (2 1/2 cups) grated cheddar cheese

3 sprigs thyme, leaves picked

Instructions

  1. Warm the milk gently, then mix with melted butter, honey, and yeast. Let sit 5–10 minutes until foamy.
  2. Beat in the eggs, then gradually add flour and salt to form a soft dough.
  3. Knead on a floured surface for 8–10 minutes until smooth and elastic.
  4. Place in a greased bowl, cover, and let rise 1 hour or until doubled in size.
  5. Punch down dough and roll into a large rectangle.
  6. Spread tomato-pepper sauce evenly, sprinkle with most of the cheddar and thyme.
  7. Roll up tightly into a log and slice into even rolls.
  8. Arrange rolls in a greased baking dish, sprinkle remaining cheese on top, and let rise 30 minutes.
  9. Bake at 375°F (190°C) for 20–25 minutes until golden and bubbling.
  10. Cool slightly before serving warm.

Notes

Swap cheddar for mozzarella, gouda, or a cheese blend.

Add mushrooms, olives, or spinach for extra filling.

Use pesto instead of tomato sauce for a different flavor.

Sprinkle parmesan on top for a crispy finish.

Make vegan with plant-based milk, butter, cheese, and egg substitute.
