Sour Cream Beef Noodle Casserole is a creamy and savory baked dish featuring tender egg noodles, seasoned ground beef, and a rich sour cream and cottage cheese sauce. Topped with melted cheddar and Parmesan cheese, this comforting casserole is perfect for family dinners or casual gatherings.
12 oz uncooked egg noodles
1 lb ground beef
1 yellow onion, finely chopped
2 medium garlic cloves, minced
1 can (15 oz) tomato sauce
1 can (15 oz) diced tomatoes, drained
1 tablespoon Worcestershire sauce
2 teaspoons smoked paprika
Red pepper flakes, to taste
Salt and pepper, to taste
8 oz sour cream
8 oz small curd cottage cheese
½ cup shredded Parmesan cheese
2 cups shredded cheddar cheese
Fresh parsley, for garnish
Preheat oven to 350°F.
Cook egg noodles according to package instructions until al dente. Drain and set aside.
In a large skillet over medium heat, brown ground beef with chopped onion and minced garlic. Drain excess fat.
Stir in tomato sauce, drained diced tomatoes, Worcestershire sauce, smoked paprika, red pepper flakes, salt, and pepper. Simmer for 5–7 minutes.
In a large bowl, combine sour cream, cottage cheese, and half of the shredded cheddar cheese.
Add cooked noodles and beef mixture to the bowl; stir until well combined.
Transfer mixture to a greased 9″x13″ baking dish.
Sprinkle remaining cheddar and Parmesan cheese evenly on top.
Bake uncovered for 25–30 minutes until cheese is melted and bubbly.
Garnish with fresh parsley before serving.
