A warm, comforting Spiced Baked Fruit dish featuring honeycrisp apples and bosc pears infused with cinnamon, ginger, and lemon juice, topped with crunchy pecans and vibrant pomegranate seeds for a perfect balance of sweet and tart flavors. Ingredients

Fruits

  • 2 medium honeycrisp apples
  • 2 ripe but firm bosc pears
  • 1/2 a lemon, juice only
  • 1/2 a pomegranate, seeds only

Spices & Oils

  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 2 Tbsp coconut oil, melted

Nuts (Optional)

  • 1/2 cup raw, unsalted pecans

Instructions

  1. Preheat Oven. Preheat your oven to 350°F (175°C) to ensure it’s at the right temperature for baking the fruit evenly.
  2. Prepare the Fruit. Core the apples and pears, then slice them into small, lengthwise pieces about 1/2-inch thick. Place the sliced fruit in a large mixing bowl or directly into a baking/casserole dish.
  3. Season the Fruit. Add the ground cinnamon, ground ginger, and freshly squeezed lemon juice to the fruit. Melt the coconut oil in the microwave for about 30 seconds until liquid, then pour it over the fruit. Mix well so all fruit slices are evenly coated with spices and oil.
  4. Begin Baking. If you mixed the fruit in a bowl, transfer it now to a baking dish. Bake the fruit in the preheated oven for 30 to 35 minutes, until the fruit is tender and lightly browned.
  5. Prepare Toppings. While the fruit bakes, remove the seeds from the pomegranate. To minimize mess, do this in a colander submerged in water. Set the pomegranate seeds aside.
  6. Add Toppings and Toast Pecans. After the initial baking time, remove the baking dish from the oven and sprinkle the pomegranate seeds and pecans over the fruit. Return the dish to the oven for another 7 to 8 minutes to toast the pecans and warm the pomegranate seeds.
  7. Serve Warm. Remove the finished dish from the oven and serve immediately while the fruit is still warm and the pecans crunchy. Enjoy as a wholesome dessert or alongside breakfast dishes.
