Elegant pears poached in spiced red wine until tender and infused with warm flavors, served with a syrupy reduction and vanilla ice cream for a stunning dessert.

Ingredients

6 pears

1 x 750 ml bottle red wine

1 cup sugar

1 cinnamon stick

2 strips orange rind

1 vanilla bean, split

Vanilla ice cream, to serve

Instructions

  1. Peel the pears, leaving stems intact for presentation.
  2. In a large saucepan, combine red wine, sugar, cinnamon stick, orange rind, and vanilla bean.
  3. Bring to a gentle simmer, stirring until sugar dissolves.
  4. Add the pears, ensuring they are mostly submerged.
  5. Simmer gently for 25–30 minutes, turning occasionally until tender but still holding shape.
  6. Remove pears with a slotted spoon and set aside.
  7. Continue simmering the wine mixture until reduced to a syrupy sauce.
  8. Serve pears warm or at room temperature with syrup drizzled on top and vanilla ice cream on the side.

Notes

Use medium-bodied dry red wine like Merlot or Shiraz for best flavor.

Substitute pomegranate or cranberry juice for an alcohol-free version.

White wine works for a lighter variation.

Experiment with spices like star anise, cloves, or cardamom.

Pears can be prepared a day ahead and refrigerated in their syrup.
