Ingredients

Slaw Ingredients:

5 cups cabbage (half red and half green)

1 cup shredded carrots

3 green onions, chopped

1 1/2 cups cucumber, shredded or diced (use seedless cucumber for the best texture)

1 tsp lemon juice

1/4 cup apple cider vinegar

2 tbsp granulated sugar

3/4 tsp salt

1/2 tsp black pepper

Dressing Ingredients:

1/2 cup mayonnaise

2 tbsp sour cream

1 1/2 tbsp prepared creamy horseradish

1 1/2 tsp coarse-grained Dijon mustard

Pinch or two of red pepper flakes (omit if you don’t want it spicy)

1/4 tsp cayenne pepper (omit if you don’t want it spicy)

Instructions

  1. Prepare the Vegetables: In a large mixing bowl, combine the cabbage (both red and green), shredded carrots, chopped green onions, and cucumber.

  2. Make the Dressing: In a separate bowl, whisk together the lemon juice, apple cider vinegar, granulated sugar, salt, black pepper, mayonnaise, sour cream, horseradish, Dijon mustard, red pepper flakes, and cayenne pepper.

  3. Combine: Pour the dressing over the prepared vegetables and toss everything together until evenly coated.

  4. Chill: Cover the slaw and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.

  5. Serve: Toss the slaw one more time and serve chilled as a side dish to grilled meats, sandwiches, or tacos.

Notes

Adjusting Spice: For a spicier version, increase the horseradish, red pepper flakes, or cayenne pepper. If you prefer a milder slaw, reduce or omit the spicy ingredients.

Vegan Option: Substitute the mayonnaise and sour cream with vegan versions like cashew cream or vegan mayo for a dairy-free slaw.

Custom Add-ins: You can also add bell peppers, radishes, or sweet corn for extra texture and flavor.
