This Spinach and Feta Omelet is a quick, healthy, and flavorful breakfast made with simple ingredients. The creamy feta and fresh spinach, combined with a touch of garlic powder and oregano, create a deliciously satisfying meal.

Ingredients

2 large eggs

¼ teaspoon oregano

¼ teaspoon garlic powder

Salt to taste

½ tablespoon butter (divided)

½ cup baby spinach

¼ cup crumbled feta cheese

Instructions

  1. In a bowl, whisk together the eggs, oregano, garlic powder, and a pinch of salt until fully combined.
  2. Heat a non-stick skillet over medium heat and add ¼ tablespoon of butter. Once melted, add the baby spinach and sauté until wilted, about 1-2 minutes.
  3. Pour the egg mixture into the skillet over the spinach. Let it cook for 1-2 minutes, until the edges begin to set.
  4. Sprinkle the crumbled feta cheese over one side of the omelet.
  5. Carefully fold the omelet in half using a spatula and cook for another 1-2 minutes, allowing the eggs to fully set and the cheese to melt.
  6. Remove from heat and serve immediately.

For a variation, add mushrooms, onions, or tomatoes for extra flavor.
