Ingredients

1 cup unsalted butter, melted

1 ½ cups packed light brown sugar

2 large eggs

1 ½ teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground ginger

1 cup white chocolate chips

¾ cup dried cranberries

8 oz cream cheese, softened

½ cup unsalted butter, softened

3 cups powdered sugar

1 teaspoon vanilla extract

½ teaspoon orange zest (optional)

½ cup dried cranberries, for topping

½ cup melted white chocolate, for drizzling

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Whisk together melted butter and brown sugar until smooth.
  3. Add eggs and vanilla extract, mixing until combined.
  4. In another bowl, combine flour, baking powder, salt, cinnamon, and ginger.
  5. Gradually fold dry ingredients into wet mixture until just combined.
  6. Stir in white chocolate chips and dried cranberries.
  7. Spread batter evenly into prepared pan and bake for 22–25 minutes, until golden and a toothpick comes out clean.
  8. Cool bars completely before frosting.
  9. For the frosting, beat softened cream cheese and butter until smooth.
  10. Add powdered sugar, vanilla, and orange zest; beat until creamy.
  11. Spread frosting evenly over cooled bars.
  12. Sprinkle dried cranberries on top and drizzle with melted white chocolate.
  13. Chill for at least 30 minutes before cutting into squares or triangles.

Notes

Add chopped pecans or walnuts for crunch.

Swap dried cranberries with dried cherries for variation.

For stronger citrus flavor, add extra orange zest or a splash of orange juice to frosting.
